    Mom's go to meal for one or 100.
    50% elbow macaroni, 25% ground beef, 12.5% diced fresh or stewed tomato, 12.5% green peas. Season salt to taste.

    For one person about 60% of what you would get in a box of mac and cheese, elbow macaroni cooked about half way drained, one burger fried and crumbled, one large diced tomato, one hand full frozen green peas. Mix all in the pot the mac was cooking in low heat until the macaroni is cooked. Stir to keep from burning, add a little water if needed season salt to taste.

    I like making curry chicken and rice.

    Most of my cooking is with an electric skillet.

    Chicken 16 oz. can be smoked, canned, fresh (cook first)
    Garlic 1tsp
    Turmeric 1 TBSP
    Ginger 1tsp
    Sea Salt to taste
    Black / Red pepper to taste
    2 cups white rice
    2 cups water

    Heat everything to boil, cook following rice instructions.

    I also toss this recipe into my InstaPot pressure cooker using smoked chicken fresh off the grill.

    Here's another quick and easy Pasta Salad that is really good during the Summer.

    Chicken Pasta Salad serves 4

    12 oz. package rotini pasta
    1.5 pounds skinless, boneless chicken breast halves cut into strips
    1/4 teaspoon lemon pepper
    1/4 teaspoon garlic powder
    4 ounces feta cheese crumbled
    4 cherry tomato diced (I used Black Vernissage the last time, a great tasting heirloom grape tomato if you can find them.)
    1/4 cup Italian salad dressing (Newmans Own Family Recipe Italian Dressing is good) I actually like mine soupy so I add more on my individual serving.
    Splash of fresh lemon juice if its in season


    1. In a large pot with boiling salted water cook pasta until al dente. Drain.
    2. Simultaneously season chicken strips with lemon pepper and garlic powder. Broil in oven for 5 to 7 minutes, or until juices run clear. Cool chicken and cut into bite size pieces.
    3. Mix cooked pasta, chicken, quartered tomatoes, and feta cheese.
    4. Serve with Italian dressing poured over top of pasta.
